I've set the document settings to allow me to separate multiple pages into multiple documents by using a blank page between the groups of pages. Is there a way to do this and not include the blank page in the saved files when complete?

That is impossible.
If you meant to group multiple files while only separating with a blank page, that is impossible. the software can either scan each page to a file or all scanned pages to a single file.
The HP Scan software can scan all loaded original into one document or into separate files.
You would need to manually split the original sand load any required page for a session, then start a new scan with the next batch of pages.
The HP software cannot split a such manually based on a blank page separation.

Hi,
Open your printer software, select Scan and then click on Scan a Document or Photo.
Select Save as PDF.
Click More > from the right panel.
Within the Document tab check the Delete Blank Pages option.
Within the Destination tab click PDF within the file Type drop-down menu, then check the box to separate pages.
Click OK and press the Save icon to save the changes or create a new scan shortcut.
That will save each page as a single file and remove any blank page.

I don't want to save each page as a separate file. I want to be able to separate multiple pages into multiple documents. For example, if I have a 10 page document and a 5 page document, I can scan all 15 pages with a blank sheet in between. This will place them in the scanning as 2 separate documents, but the blank page remains part of the document.
If I check the box to delete blank pages, I cannot create multiple documents.
