Hy guys,
I'm facing the same issue since I have installed OS Sierra. Previously all was working fine. So the reason must be within OS Sierra. Scanning from the computer (Easy scan or HP scan is working). Also printing is working.
I have done everything I can do in re-installing, setting back the printer to the factory settings. Just to have it done if it comes to standard questions from a support guy.
For me the reason could be linked to iCloud. With the installaton of OS Sierra I decided to move the documents to the iCloud. Means on my Mac the Document folder is now linked to the iCloud (it's not local anymore). The Scanning folder was in this Document folder. Maybe the issue is here because the HP Software tries to recognize or to create this folder but it's not poosible because the folder is in the iCloud. I had the same issue with Money (Finance App) applying a workaround putting the files into the Download folder.
Just trying to contribute and hoping to solve this issue soon. I'm also confident that HP will start working on this soon.

When you have navigated to the file you want to save it in press 'choose' from the options at the bottom and this takes you back to the Easy Scan App where you can press 'save'.
Hope this helps- it works for me.

I tried everything proposed in this thread without any success:
- Removing HP drivers from /Library/Printers/hp and /Library/Printers/PPDs/Contents/Resources/
- Deleting configured printer
- Uninstalling HP Easy Scan
- Upgrading to latests Sierra version (10.12.1 beta 3 at the time of writing this)
- Configuring new printer
And scan is not working. In fact, installing again the printer, the scanning feature is not detected (or at least the tab 'Scan' doesn't exists in System Preferences -> Printers & Scanners).
Definetively seems to be related to Sierra, because I have an older laptop with OSX El Capitan, and scanning is working properly on the same network with the same printer.
