You need optical character recognition software (or firmware)
Not all HPs come with OCR. Check the product support page for OCR download.
If not built into the printer then you need to obtain a 3rd party app that can parse the scanned document.
There is free OCR software available here.
It may be easier to use a smartphone and an app to do the OCR: Google Lens, Adobe Scan, and Microsoft Lens
