That's almost enough information -- perhaps ask your favorite AI to expand on the possible answers (there are several possibles, in fact).  AI is particularly good at considering many answers at once and providing choices based on probabilities.

One of the more common reasons for scan that suddenly turn black and white might involve the application you are using to produce the scan and how the device (computer, tablet, phone) is interpreting the driver assignment. 

Too, it could be as simple as having selected a Black and White Filter when editing the scanned content in the HP App.  This is admittedly not something you would normally miss.

HP Scan - Windows - includes Shortcut options that could switch from color to Black / White.  This is similar to the Filter edits in HP App though the "how you get there from here" is different.

The printers in this series have more than one EWS Preset that sets Default Job Options.  Ask if this is something you have adjusted or for which you need additional help.

The printer might need to be Reset -- this is a simple procedure and can clear several odd issues with printing and scanning.   HP OfficeJet Pro 9010, 9020 printers - Paper Jam error →  Step ⑤

Windows, for example, might suddenly have issues with color printing -- or scanning? -- when Printer Properties has been set to select one of the IPP / Microsoft drivers instead of the installed HP driver.
