I need to scan in bulk and split the file so that each document saves as individual PDFs. This feature was previously available but was removed when HP Scan and Capture was discontinued. Why?

Welcome to the HP English Community --
I have HP Smart on several Windows systems, one iPad, and one iPhone.
Can you describe where in HP Smart you used a setting to split PDF documents into separate files??
For example, HP Smart on Windows? iPad (iPadOS)? iPhone (iOS)?
I will check again.
In so much that I am aware, HP Smart to Share (email) is not discontinued. That said, when you try to use HP Smart > Share through Windows, it might balk and act like it doesn't work. What? The "New Outlook" interface destroyed the connection between the app and Share when New Outlook was introduced late last year. The setup (using New Outlook) might not be fixed yet. Switch back to Windows Mail (if you can do so) and Share will perhaps start working again.
Side Bar - Share to Email - Shortcuts
There is also a weird workaround for Share (send in email) that you can use with HP Smart Shortcuts. Ask if you would like to see an example.
What else?
HP Scan is still around -- it is true that for a few of the newest OfficeJet Pro printers and some Laser Printers, that the full driver printer software is somewhat different. HP Scan or it's new-format cousin, HP Universal Scan or a new version of the software based HP Scan is still available. Yes, it sounds confusing without any context to the printer model -- some things just need to be tied to the model to make sense.
HP Scan (still) supports saving content as individual files.
Example - Standard / Original HP Scan - Menu - More > Destination > File Type
9025_HP_Scan_Menu_PDF_More_Destination_9

Hi Dragon-Fur, I misspoke—I meant the "HP Scan and Capture" Windows app which was discontinued May 1, 2024. I've edited my original post to help anyone else with the same issue. Thank you, this did solve my issue (although much more complicated than the discontinued app) and I really appreciate your help!

You are welcome.
Makes sense --
Yes, HP Scan and Capture was retired after ten years.
The app was popular and is sorely missed by many.
Sad faces all around.
See if you can create a custom Shortcut in HP Scan > Save as PDF > Make changes > "Create New Scan Shortcut"
The change would be that setting for Destination and File Type.
? I don't remember whether Custom Shortcuts can drill down that deep.
Luck would say, "No". 😑
