Problem occurred in the middle of a series of scans. Selecting either photo or document causes the app to close. Corrective steps taken:
1. Restarted computer
2. Uninstalled HP Scan and Capture
3. Reloaded the product from the Microsoft Store
4. Restarted the computer.

Welcome to the HP Community Forum.
Not sure, though this printer does at least provide a full driver printer software package.
HP Scan and Capture does want the full driver installed (and functional).
If something has happened to the full driver, HP Scan and Capture might behave strangely.
Applications and Software can also suddenly behave oddly if Windows Updates are pending (computer needs to Restart).
Windows Updates can also inexplicably stomp on printer software (or other programs) and result in the printer (or other software) needing to be uninstalled / reinstalled.
If the printer is connected to a power strip as opposed to being properly plugged into a wall outlet, scanning might suddenly stop if the printer cannot get the power it needs.
Try / Consider
Restart Everything, including the router that controls your network
Next,
Uninstall the full solution driver from Programs and Features
Restart the computer and log in
Install a fresh copy of the full driver printer software
After the software is installed, Restart the computer and log in

Preparation
- If the printer software is still / already installed, Uninstall the printer software from Control Panel > icon view > Programs and Features > Restart the computer and log in – Reference Uninstall HP printer software and drivers
- >>> After the printer software is uninstalled, check that the printer is not still lurking in Devices and Printers. If the printer is listed, Right-Click on the printer and "Remove" > Restart the computer and sign in.

- If using VPN, shut it off to install software. NOTE >> If you don’t know what this is, you are not using a VPN – ignore this part.
- Reminder: If using USB cable between printer and computer, disconnect the cable before installing software. Later... Connect the cable when instructed (near the end of the installation procedure).

- Download and Save the Full Feature Software Web Pack installation package
- Open File Explorer
- Navigate to the folder in which you saved the installation file (likely Downloads)
- Right-Click on the installation package and “Run as Administrator”
- If using a USB printer cable to connect the printer to the computer, connect the cable when instructed to do so, near the end of the installation procedure
- After the software is installed, Restart the computer and log in
