Not every paper size is supported in the ADF and not all paper sizes and types are supported for 2-sided scans.
General Example - HP Smart - Windows - PDF - Scan Document
Select the setting to scan "2-Sided" under the Setting for Source (ADF / Automatic Document Feeder).
The example shows next Option as "Share", though you can certainly select "Save" instead.

Thank you Dragon-Fur for your response. Not sure why my initial inquiry cut short, but let me fill in some details. I just purchased a HP Office Jet Pro 9025e last week. As you noted, the stat sheet for the printer reports that it can scan 2-sided documents and the printer box also states that the printer "automatically scans both sides of page at same tim." I also confirmed with retailer that the printer scans 2-sided paper documents. I have thousands of pages of 2-sided, letter-sized legal documents and tax returns that I am trying to digitize into pdf format to save ultimately on an external hard drive. Here is the issue--I am putting each 2-sided document into the printer document feeder and scanning onto a USB drive. Although the printer screen has an option for copying 2-sided documents, it does not have a similar command for scanning a 2-sided letter sized paper document. The printer only will scan one side of the document. While I can flip the document and scan the other side, that is time consuming and will not keep the pages in order or in the same pdf. Any further thoughts on how to simply accomplish my task woth the new HP 9025e printer?

You are welcome.
Warning -- All typed "on the fly" - never a great idea.
Forgive typing and / or other errors...
Perhaps the feature you seek, that is, scanning directly at the printer using the USB drive destination is not available.
Scanning of this type is perhaps limited to whatever is built into the printer without consideration to the source (ADF) or the document type (2-sided). ?
That's just a guess -- I generally scan from various apps or software.
If the USB based option is available, it might be explained in the user manual:

Manage how multiple documents can be separated when scanned from the ADF.
Using the HP Scan software does include saving to your choice of folder, either local or mounted external.
Try it on a "small stack" before you load the ADF with the allowed 30 or so sheets.
All the sheets should be the same size... The printer lacks a paper sensor for detecting paper size changes.
For example,
- HP Scan > Save as PDF > More > Document > Adjust Documents
=========================================
HP Scan
Select Shortcut to Save as PDF
Set main menu sections, including the options for Page Size and Page Sides
Select More > to open available sub-menus
Select sub-menu Document > Open sub-section Adjust Documents
Optional > Select "Delete blank pages" and the level of sensitivity
Optional > Select to "Separate pages into multiple documents" and method of separation (blank or number of pages)
Select OK to save changes and return to Document sub-menu
Optional > Continue to any other sub-menu
Select < Less to return to main menu
When ready, Select Scan
