JPEG is not a document - it is the file type for an image (photo) file.
In that context, your comments and question lack enough information to know what you are trying to accomplish.
What software or application are you using?
For Example,
Are you using the full driver printer software > HP Scan
OR
Are you using HP Smart Windows?
and
Are you sure you want to scan JPEG Images into one file?
It can be done; the results are not a document.
OR
Do you want to scan pages of a document together into one PDF file?
You have failed to mention which Operating System you are using.
The OS is important because not all Operating System support the same options.
More than "8600" as the printer model would be helpful.
Finding your Product Name, Product Number, or Serial Number
