Welcome to the HP Community Forum.

The SMTP server depends on your email provider.

Search (the 'net) for SMTP settings for your mail setup.

When your printer supports SMTP Digital Send for email,

Create a Scan to Email Profile for your setup using the Embedded Web Server (EWS).

Be aware that some (more than one) email carrier might have disabled "Less Secure Apps" access.

The solution:  Switch on 2-Step Verification > Create and use an App Password in place of your normal "password" to your email.

@Dragon-Fur has provided excellent instructions. I would add one thing, if you already have the SMTP server and still cannot connect,  check the network settings of the printer and make sure that the gateway address is correct and that your DNS settings are valid. You should use 8.8.8.8 as your secondary DNS. This is the google DNS servers and typically will properly locate any SMTP server you happen to use.
