 when going under settings then apps and notifications then apps info then selecting the app. I do not see an option for switching storage?

When I tap on settings, then apps and notifications, then apps info, then select the app, I do not see any option to change the save location.

Try installing a third party File Manager App and then touch "share" after scanning the document. From that particular File Manager, you would able to choose your destination for saved scans.
