Operating System: macOS 11.0 Big Sur

I have a new HP Smart Tank 7300 printer running on my home network. I can print in colour from my phone. I can print in colour from my Mac OS computer if I am connected via WiFi. However, I can not print in colour -- there is no option to do so -- when I print connected via USB. 

My only options are B&W and B&W - Draft. There is no colour option. Colour documents print in B&W. I can find nowhere to change this.

I'd strongly prefer to print via USB on my main computer.

What is going on here? Why am I unable choose a colour profile when connected directly to the printer via USB>
