I've been wanting to know if I can upgrade the HP 255 G7s RAM before I buy it, any help?

Yes, you can upgrade the memory but...

 

What model do you want to buy?

 

The 255 G7's that come with the AMD 'A' series processors have one memory slot, and the max memory is 1 x 8 GB.

 

The 255 G7's that come with the Ryzen processors have two memory slots, and the max is 2 x 8 GB.
