When I try to re enroll it keeps saying it cannot find my printer as it’s not connected. When I troubleshoot my printer is there and connected, I am also able to find it ok on my computer. It is just the re enroll/update part that will not say it’s connected.

I understand you are unable to finalize the instant ink subscription.
Try using a different browser to complete the enrolment, You may also refer to the document -- Enrolling in HP Instant Ink
Also, Make sure the date and time on the computer are set correctly.
