I have a few clients that use the P2035N and P2055N. I'm looking to find out the end-of-support for these printers. It looks like the last driver was issued for the P2035 and P2055 in 2015 and 2018, respectively. Is there any specific place to find out how long the products are planned to be supported like there is with Microsoft?

You can contact HP to find out the EOL (End of Life) of any given product.
Once a product has gone EOL then no further driver or software updates will be available from HP. In rare cases like major OS updates or security vulnerabilities HP will go back and support EOL models. However, they only go back so far in time for special cases like that. If you find you are sufficiently out of support for a product then the business model is to replace that printer with the current one.
If Microsoft decided to provide additional support via thier class driver system for a given model then you will need to check with them for updates.
Printer models that support UPDs can continue to get updated drivers. However, if you find a defect on a UPD, HP isnt going to make any efforts to fix them for you.
The P2035 is already End of Life:
