How do I rest the SSID on a HP LaserJet Pro CP1025nw Color Printer?

There are normally two options:

1. On the control panel you can navigate through the Wireless settings area and manually type the new SSID, overwriting the old one.

2. Network connect to the printer.  Enter the printers IP Address into a supported web browser and navigate to the printers Embedded Web Server/admin page.  Adjust the printers SSID in the wireless networking area.

If you are looking to reset the SSID back to the defaults then the only way to do that is with a COLD or NVRAM Reset.  Steps for this process can be found online or in a Service Manual.  I dont think that is necessary for you on a simple reconfiguration task like this though.
