HP LaserJet Pro MFP M128fn
Microsoft Windows 7 (32-bit)

Printer was recently donate to non-profit organization for use with point of sale software. With our previous printer, a Canon, we were able to go into Windows Control Panel, and under printers, printing preferences, set the printer to automatically print two copies of each document. This is important to us, as our office requires two copies of each transaction, and the POS software does not have the option of selecting number of copies.

However, the new HP printer does not seem to have any option for changing default number of copies. A number of calls to customer support resulted first in incorrect information (regarding two sided printing, which is not what I asked for), and finally no solution.

It doesn't seem logical that this printer would have no way to change the default number of copies. Does anyone know a way to do this?

See the User Guide on page 6:

The setup button should have what you need:

"Scrolls between the copy settings for number of copies, darkness, and copy size for each job. The default option is the number of copies. To change the default settings for all jobs, scroll to the setting and then press and hold the button for 3 seconds. When the light is blinking, adjust the setting. Press this button again to save the setting."

These options should be there for the HP.  Printer Preferances is a feature Windows offers for all installed print queues.  Confirm what options you can see for us.

Otherwise you can configure and control print defaults for all computers by setting  up and configuring a print server.  That way any comptuers that go through the print server will get your desired printer default settings.  In a POS scenario this may be an ideal setup as they all likely need the same customizations applied and would benefit from a single locked down queue that is customized to your apps.

I can't see any options to change number of copies in control panel printer preference

Try switching your print driver to a Universal Print Driver.

Attached is where I found the Copy Count feature under Printing Preferances > Advanced Tab:
