I recently purchased an HP Envy 7645 to print from my Ipad using Airprint. The default printing options are set to double-sided and color. I have to change this every time I print. How do I change the defaults to single-sided and black & white ?

If you continue printing with Apple AirPrint please refer to this article: http://hp.care/2CD8zsK which gives you information in the FAQs and check if this helps. Check the option "How do I select or change print options?"
Look under the section for iOS and download the HP Smart app from Itunes. then install it and this might do the trick for you. It might help you with single-sided printing. It has FAQs also.

Thank you for posting your query on this forum, it's a great place to find answers.
I reviewed your post and I understand that you want to know how to change the default print settings on the printer.
Don’t worry, I assure you I will try my best to get this sorted.
Please follow the below steps to change the printer defaults settings.
On the Print dialog, use the Paper Size pop-up menu to select the size of paper loaded in the printer.
● On the Print dialog, choose the Paper Type/Quality pop-up menu and select the appropriate paper type and quality.
● To print a black and white document using only black ink, choose the Paper Type/Quality from the popup menu and choose Grayscale from the Color pop-up menu.
