I have a HP Office Jet Pro 8710 and have it set up for wireless printing. My question is, when I email a file to my printer to be printed, does the file get stored anywhere and as such is there a security risk should the file be sensitive information? Thanks in advance, Paul

ePrint does not store the file at least not where anyone could gain access. ePrint History was disabled a while ago (2016?) - there is not even a way (other than in your own email service) to track what jobs were sent to the ePrint email address.
If your printer lacks the ability to connect directly to smtp, Web Services and the Cloud servers are used to send the job on its way to the printer. If a copy is kept, it would be kept on protected Cloud Servers and likely for only as long as it takes for the job to conclude. For example, if you submit a print job to your printer and the printer is switched off, the job might get stuck in the cloud queue for a period of time while the queue tries to resend the job. I do not know whether this is actually the case nor do I know (assuming it is indeed how it works) "how long" a job will try to "resend".
The description is somewhat vague simply because we do not have any access to the precise manner in which the Cloud Servers are managed. This is internal HP business and we are not made privy to the details.
My Opinion:
There is no reason to believe that Cloud Servers keep copies of your email: Cloud Servers are not email providers (like Yahoo or Gmail, for example). The data is not worth the money, the programs necessary to maintain the archives, the (human) effort to manage the data, or the huge amount of necessary data storage space .
The bigger risk, if there is one, is typing the wrong email address in the "Send to" line when you are submitting the job.
You will likely find a copy of the job in the email service used to send the file.
For example, log into your email program used and look in the Sent folder.
If you want a copy of the job / file in other than the Sent folder, add yourself to the CC or Bcc.
