You cannot use the hpeprint.com email as your "mailer".
You can use the hpeprint.com address as the recipient of the "scan to email".
Set up (one of) your own email addresses in an installed mail program on the computer.
If you do not know the smtp settings, search for the settings using your favorite search engine.
For example, search for "gmail smtp settings".
Remember:
Scan to email cannot handle "two-step verification" settings.
Scan to Email – Gmail – Switch OFF Two Step Verification
(Log into Gmail) > My Account > Sign-in & security >
At right side of window under “Password and Sign-in method” >
Switch OFF Two Step Verification
And
Section “Apps with account access” >
Switch ON Access for less secure apps
If you are not happy to switch off the verification, create / use another email address and switch off the two-step / access in that email address.
Create your "scan to email" profile using the printer software "Scan to Email Wizard".

Scan to Email – “Launch and Send” or “Auto Send” – Contributed by ShlomiL
Paraphrased from Thread Scanning to Email
Launch and Send
The scan software on the computer scans the document / image, launches an email New Message dialog, attaches the email to the “new message”. The user (you) must complete the email subject, “To” field, add any textual content (in the body of the letter) and click “Send”.
Auto Send
If the printer is connected to the network,
Open the Printer Assistant (shortcut icon on the Desktop named for the printer),
Scan to Email Wizard > Create an email profile (SMTP)
Once the email profile is created, use (on the printer):
Scan > Email
Check your DNS settings – As a test, try using Google DNS in your region.
