I would like to use my Envy 360 Convertible with a port replicator however, I would like to be able to set it up to use only my 27" monitor, Standard KB and Mouse. I would like to keep the laptop closed and off to the side due to space issues on my desk. Is this doable?

Of course. I am working on this from my laptop operating through a port replicator with a pair of 4k monitors, keyboard, mouse connected to speakers and ethernet with the laptop screen closed. Do you need to have advice about a port replicator to buy or just how to set the laptop up so it can have the screen closed and still drive the other hardware or both? Either way we need the full model number of the laptop.

Your usb-C port is data only so you need a port replicator with something called DisplayLink technology. Like this:
This will not power the laptop you need to use your provided power supply. Then to prevent the laptop from going to sleep when you close the lid do this in the control panel/power options/choose what closing the lid does
