Most of the Victus by HP 16 laptops do have two M.2 NVMe slots.
You are going to have to open it up and take a look to verify that.
I have been unable to find a video with your specific Victus 16-s1000 series.
Removing the bottom of the laptop enclosure is quite a simple task.
