Hi, my current laptop has a 2TB HDD as standard, can I replace it with a Samsung 860 Evo 1TB SSD. If so then what do i need for transferring everything over from the HDD to the SSD

Because you need to transfer EVERYTHING therefore 2TB won't fit to 1TB.You need 2TB SSD and yes you can use 2TB of Samsung 860 or Crucial MX500 series of 2.5" SSD's.
The easiest way to transfer EVERYTHING is to clone. You can use many free clone software to clone HDD to SSD and then replace HDD with SSD. One example
