Can anyone recommend either a docking station or a multi port for use on my laptop
I really want to connect 2 screens to it as do lots of spreadsheet work
HP says there is only one display port (HDMI) and they cant/wont/dont recommend a dock to use?

There is no "dock" for your laptop or any other HP consumer notebook made in the last 5-7 years. Dock means a station where you can snap the laptop down onto it or plug into a port on the laptop and the dock provides both power and port replication. And as you point out your lineup of expansion ports on the laptop is limited. You have one HDMI and a USB 3.0 port and then 2 x USB 2.0 ports.
Only the USB 3.0 port is a viable option for expansion. You can get a USB 3.0 "port replicator" which will provide video output, even dual video out.
For spreadsheet work this would be more than adequate. You will still have to use the regular laptop AC adapter for power, but you can have all the peripherals (keyboard, mouse, 2 monitors, hard wired ethernet, speakers, etc.) connected to the port replicator. My advice is to buy this and an extra AC cord so when you bring your laptop to it, you connect the USB 3 from the PR and the extra AC adapter you always have there. Set the laptop up so it "does nothing" (i.e. does not go to sleep) when you close the lid so basically your closed-lid laptop is the CPU of a desktop computer setup. If you remove the laptop from the connections and open the lid it will display on just the laptop screen.
