I have an HP Pavilion Gaming Laptop 15-ec0025nf and I would like to know what maximum Ram memory I could put and the cheapest docking station option to connect two monitors. Thanks.

I can only answer your question regarding the memory upgrade.
Below is the link to the service manual.

Chapter 1 has the memory upgrade information.
Your notebook has two memory slots and can support 2 x 16 Go of DDR4 memory.
Most folks install DDR4-3200 CL22 memory that will run at 2400 MHz.
