Hi:
According to the Crucial memory report for your notebook's model series, it will support up to 2 x 32 GB of DDR5 memory, so you should be able to install 2 x 16 GB of memory.
HP - Compaq HP OMEN 17-ck1000 | Memory RAM & SSD Upgrades | Crucial.com
The model series supports DDR5-4800 MHz.
DDR5-5600 MHz memory would work fine but it will only run at a maximum speed of 4800 MHz because that is as fast as any of the processors offered in the model series can run the memory at.
OMEN 17.3 inch Gaming Laptop PC 17-ck1000 series specifications | HP® Support
HP only has the service manual for the previous model series, but it may be of help with opening up the notebook to upgrade the memory.
