I have a HP ENVY Notebook 15-as031nr (Touch) (ENERGY STAR), Model #: W2K81UA, Serial #: (removed content)that has a 128GB SSD and a 1TB HHD. I am running out of space on my SSD and many applications do not like to be installed on anything that is not a C:\ I was looking at taking out the 128GB SSD and 1TB HHD and replacing it with a single 1TB SSD. Is that possible?

Did you ever receive the 512gb NVMe drive? If so, can you share details about the manufacturer, performance, etc.?

Sure but the devil is in the details. It is not whether but how to do it. See p. 30 of the Manual here:
That assumes you want to remove the larger HDD and replace it with a SATA 2.5 inch SSD. You could also have a larger sized M.2 mSSD and keep the 1 TB HDD. Could you get by with say a 256 or 512 gb M.2 SSD?

Huffer, your the man. I was not aware that I could change out the 128 M.2 SSD. To be honest I was not even sure what M.2 was. Now that I have read up on it, I understand.
So what I want to is install Samsung 950 PRO Series - 512GB PCIe NVMe - M.2 Internal SSD (MZ-V5P512BW) (https://www.amazon.com/gp/product/B01639694M/ref=ox_sc_act_title_2?ie=UTF8&psc=1&smid=A3JZCHWTGPHCAS). This is the most compatible one that I found on Amazon. Crucital does not carry PCIe.
My main question now is transfering the data. I am going to buy an enclosure and attached it to the USB-C port. I believe the samsung comes with data migration software.

There have been some issues with M.2 drives in some HP laptops as far as compatibility. The Samsung 950 Pro is a killer drive but I am not aware of anybody having installed one in an HP laptop yet.
The specified 512 gig PCI-e M.2 is this one:
512-GB, M2, PCIe, NVMe solid-state drive supporting TLC 857487-001
HP shows that part at @$121 which seems like a misprint but here it is:
