I want to replace the SSD on my HP Spectre x360 15-Bl1xx convertible with a 2TB SSD drive but cannot find out if my model is compatible with Gen 4 drives. Can someone provide this information? I want to get the fastest drive possible for this laptop.
Also, is the processor upgradeable on this machine?

Your model has an Intel Core i7-8550U.
Intel indicates your processor supports PCI Express revision 3.0. This means your model's M.2 slot is gen 3.

M.2 NVMe SSDs gen4 are backward compatible with a gen3 M.2 slot but run at gen3 speeds.
You should be able to install a 2 TB NVMe SSD.
Your processor is soldered to the motherboard and cannot be upgraded.
