Received pop-up notice that the HP OfficeJet Pro 6978 is no longer being supported. Is this true?

Welcome to the HP Community --
In my opinion, this is one of the reasons to have Notifications switched off.
The wording used in the message is scary and does not reflect anything related to using your device (printer).
The printer is fine, the printer software is fine (and still available), the printer documentation is fine (and still available).
The whole thing is simply a message letting you know that HP is likely no longer providing the full support enjoyed by newer products. For example, HP might no longer offer in-house purchase of trays or other spare parts.
Important: Ink is not considered a "spare part".
Software for supported Operating System versions might be available for six to ten years.
Documentation is typically available for ten years.
Ink is available as long as the market supports minimum profitability for the product -- availability is typically maintained long enough that the product has reached end of useful life for other reasons. True -- there are cases where hardware can outlast the availability of ink and / or software and documentation.

Method – Use PartSurfer to check the parts / components for your device
PartSurfer might be able to tell you exactly which parts came with your device.
- For best results, use the Serial Number for your search
- Reminder: Do NOT post private information (including serial number) in the Community
Open PartSurfer
- Select your Country
- Search for your computer / printer / device >> See HINT
- Need Help? Tab Self help > find and open the User Guide and FAQ
How to use PartSurfer:
- Select your region / country - PartSurfer must know your general location
- Enter your device Product Number , Serial Number, or Part Number in the Quick Search box
- HINT: To see a system-specific list, replace the Product Number with your device Serial Number
- Items accompanied by a tiny box in the Add-to-Cart column are available for purchase
Parts marked as "n/a" (or are missing from the list) are not available from HP.
Parts marked as available for purchase might be available > CHECK: HP Parts Store
OR
When HP does not provide the part for retail purchase,
Use your search engine to find a compatible part number replacement at your favorite online store.
