I need to replace the RAM in an HP ProBook 440 G6 laptop ... according to MrMemory I need
2 x 4gb DDR4 PC4-19200 2400MHz 260-pin SODIMM, however, I have found
2 x 4gb DDR4 2666MHz CL19 on Amazon, are these compatible ?

The DDR4-2666 MHz memory should work fine.
The memory will automatically bridge to 2400 Mhz.
How come you are replacing the 2 x 4 GB of memory with another pair of 2 x 4 GB memory?
You can install more memory that that in your notebook according to chapter 1 of the service manual:
Ir can support up to 2 x 16 GB of memory.

Yes, that is correct as long as the memory in both slots is the same capacity.
Then the memory runs in dual channel mode.
But I'm thinking you may want to install 2 x 8 GB of memory instead of 2 x 4 GB of memory.
8 GB of memory is barely enough nowadays.
