I'm trying to find the service manual for 15ec1025ax to upgrade my RAM capacity(adding one more in the available slot) and SSD. Can you please point me in the correct direction? Even if the manual is not available, atleast the right configuration for both these upgrades would really help.

Parts list for your model indicates that your notebook has Ryzen 5 4600 processor/ 8 GB DDR4-3200 RAM/ 512 GB M.2 NVMe SSD configurations.
HP only provides service manual for 15-ec000 series that comes with older Ryzen 3xxx processors. Chapter 1 of the manual states that 32 GB RAM is supported.
Maintenance and Service Guide HP Pavilion Gaming 15 Laptop PC
If you just want to add another memory in the empty second slot, you can install an 8 GB DDR4-3200, which allows the memory to run in the dual channel mode. If you want 32 GB, you need to remove the current 8 GB RAM and install 2x16 GB.
M.2 NVMe SSDs have no capacity limit. You can upgrade the SSD to a capacity you want, 1 TB, 2 TB or more.
