How do I find out whether the RAM in this laptop is maxed out and/or whether I can add more? Thanks.

Hello, @Gizmo510 - Hope you are well 🙂
Welcome to the HP Support Forums! It is a great place to find the help you need, from other users, HP experts, and other support personnel!
Your HP Envy X360 has a 16GB onboard RAM. I am afraid that you cannot upgrade the onboard RAM. Check the product specifications here: http://hp.care/2vMZDRs
Also, you can check the product maintenance and upgrade guide to check other upgrade options for your product: http://hp.care/2vMKzDd
I hope that answers your concern adequately. Let me know!
Good luck 🙂
