Hi,
My 2020 HP ENVY x360 Convertible Laptop - 15t-ed100 touch came with 8Gb DDR4-3200 of RAM (2x4GB modules). Are the modules soldered (onboard)? Will I be able to add/upgrade to 16GB (2x8GB) if I need to?

Unfortunately, you are going to have to open up the notebook and find out, unless in the rare circumstance someone has already done that and can provide an accurate reponse.
Here's why...
Below is the link to the service manual for your notebook.
Chapter 1 clearly states the memory is onboard and not upgradable, and comes pre-configured from the factory as listed.
However, chapter 5, pages 35 & 36 show a procedure for removing and replacing the memory.
If the memory was onboard, there would be no procedure listed for removing and replacing the memory.
