i want to upgrade my SSD to a bigger faster SSD 

can you please let me know which could i use ? 

500 GB or 1TB 

and which SSD's

Your OMEN By HP - 17-An120nr (3WE38UA), according to: http://h10032.www1.hp.com/ctg/Manual/c06001792.pdf, can be fitted with both a SATA SSD (see: #18) and an M.2 Gen3 x4 NVMe SSD (see: #11):

You can use any size SATA SSD and/or M.2 NVMe SSD you want.  You are only limited by your budget.

I would recommend purchasing quality drives: manufactured by Crucial, Samsung, Western Digital, Silicon Power, etc.

For example, for SATA SSDs:

Samsung 870 EVO SATA III SSD 1TB (p/n: MZ-77E1T0B/AM)
Crucial MX500 1TB 3D NAND SATA SSD (p/n: CT1000MX500SSD1)

For example, for M.2 NVMe SSDs:

Crucial P3 1TB PCIe Gen3.0 x4 3D NAND NVMe M.2 SSD (p/n: CT1000P3SSD8)
Samsung 980 SSD 1TB PCle Gen3.0 x4, NVMe M.2 SSD (p/n: MZ-V8V1T0B/AM)

Yes, you can fit any M.2 NVMe Gen3 x4 2280 SSD you want, as long as it has this general shape:

A Gen4 M.2 NVMe SSD is also backward compatible in a Gen3 M.2 NVMe SSD slot, but you would only see a minor speed improvement compared with a Gen3 M.2 NVMe SSD.
