Is it possible if I replace 256GB SSD (SAMSUNG MZVLW256HEHP-00H1) with a 2TB SSD(PNY CS3030 (M280CS330-2TB-RB) NVME) and remove the HDD.

Yes you can do all those things.

Not sure why you want to remove the hard drive. You can leave it in and use it just for storage but can be removed if you wish.

Many thanks, I just want to remove HDD to reduce the weight but it turns out that it doesn't shows much different plus I couldn't run window because it require the HDD to be plugged in.

That means you still have part of the OS on the hard drive. Install Windows with the hard drive removed and then put it back in after you have the system working the way you want on the SSD only.
