I had a long discussion with Microsoft support. Regarding the OS, the activation is embedded in the motherboard hardware so there will be no issue if I do a clean install on the SSD.
I also confirmed that we own a license for Office Home and Student 2019 and their website shows that it hasn't been activated yet though we have been using the product. I was told I will have no problem activating it using the Microsoft account once the OS is reinstalled. If it fails, I can contact them using the same case link.
I will be away for a couple of weeks and will do the upgrade when I return. Thanks very much Paul & Erico who helped me a great deal. I will post an update after completing my upgrade.

I bought a Western digital SN570 500 GB SSD, installed it yesterday and installed Windows 11. All went well and my computer boots up in seconds instead of many minutes. Apps start up very quickly too. I am now using the original 1 TB HDD as a data storage.
I have yet to activate my MS Office 2019 license. I will probably do that today.
