My wife uses an HP 15-ef0008ca laptop. It came with a 128gb SSD and no HDD. Can I replace the SSD on this laptop with a larger one, eg. 1 or 2 TB? Thanks.

Below is the link to the service manual for your notebook.
Chapter 1 has the drive capacities offered in the model series by HP.
Maintenance and Service Guide HP 15 Laptop PC
HP offered NVMe SSD's up to 512 GB in the model series, but I don't know of any reason why you wouldn't be able to install a larger capacity NVMe SSD than what HP offered.
