So far I've upgraded everything I could've: swapped the old i3 370m with the i5 540m, increased the ram to 8GB and swapped the old hard disk for a much faster SSD. Only one thing remains a relic of past and it's the 15.6" 1366x768 panel: it's the HP 595130-001 with a 40 pin (presumably LVDS) connector. I was looking around for a replacement screen and I found this one in particular: AUO B156HTN02.1, 1080p with I believe the same connector, for relatively cheap.

 

Beside the specific panel I dig up, my question is: because I read that "LCD whitelisting" is a thing, is there something to prevent me to swap-out the panel with a better one?

Its not a whitelist. The problem is the G62 series was only offered with the 1366 x 768 panel. So we cannot tell whether the existing cable and the video hardware on the motherboard will support  higher res. The screen you ask about is a 40 pin lower right connector and the one you are replacing is a 40 pin lower left so right away that is a problem.

You need to find a 1920 x 1080 screen LED with lower right 40 pin connection and even that may not work for reasons I gave.
