Mostly the RAM and GPU. I know the RAM can be upgraded to 16 GB. Can I replace with a faster stick?
Is the CPU and HDD (to SSD) upgradeable?

For CPU and GPU: no, you can't simply replace them because they are simply soldered to the motherboard that mean you have to buy new motherboard (if available) with new CPU, new GPU, new OS ...on pne piece of gardware.
For HDD: Yes, why not ? And the following products are fully compatible
https://www.crucial.com/usa/en/hp-15-ay503tx/CT11910060 (1TB)
https://www.crucial.com/usa/en/hp-15-ay503tx/CT11910039 (2TB)
For RAM: You already know your machine has 8 GB DDR4-2133 SDRAM (1 x 8 GB) and you can add 8GB more on slot 2. Normally you can use 2400MHz but it will only run at 2133MHz.
Regards.
