Product: HP 14-cf2000 Laptop PC (552L9AV)

New machine. Want to upgrade (replace) hard drive from 64 gb to much much more.  Has an eMMC drive. Can this be done/ how to do it?

Unfortunately, that would not be possible.

 

You would need to install a different motherboard and that would cost you more than buying a new notebook with the storage you want.

 

Here is a picture from an eBay listing of the motherboard your PC comes with.

There isn't a M.2 SSD slot and even if there was, the PC would not boot from it.
