I cancelled my HP instant ink subscription because my not even one year old printer would not connect to the wi-fi anymore, unless I do it manually every time I print a page. Now all that ink (4 boxes) that I received in the last 6 months and that I didn't need is useless, since the cartridge only work with instant ink subscription. Any idea how I can still use that ink since I paid for it?

You can use them. In instant ink subscription you are paying monthly for printed pages not for ink, ink is free you didn't buy ink, once you cancel subscription free ink will no longer work.

No, I cannot use them. And the whole subscription thing does not make sense. I paid for the printer and the paper. I understand that they can monitor my usage and send me ink when I need it, and I thought that was part of paying the subscription. Why do I have all this extra ink then? I have 4 unopened boxes and the ones in the printer are pretty much full. So if I want to use them, I have to sign up again and they'll charge me again. I should have only received ink when I needed it.

Sorry I made a typo mistake, you can't use them. Leftover ink cartridges must be returned like the empty ones you returned.
