I have read numerous chats on how to stop the color from being used when you just want. I have done all that. Just put in new cartridges (black and all new color). Master settings set to black and white (not gray). color cartridges rapidly going down. I don't want to use ANY color. Please, help me stop the color. OfficeJet 6958

There might not be anything else to try.
If the cartridges have ink, the ink will be used.
The printer uses separate color cartridges for cyan, magenta, and yellow, plus a "black" cartridge.
Printers of this type use a tiny bit of color ink to maintain the printer and sometimes to print black.
Presumably, (unless you've also already tried it,) leaving an empty cartridge in the printer will allow it to continue printing.
You might have to click to Continue each time when running on one or more empty cartridges. ?
The printer also might (at some point sooner or later) issue a warning that the printhead is damaged and stop working.

You can continue to print with one or more empty cartridges, but HP recommends replacing them as soon as possible to avoid printhead damage.

Thank you for taking the time to respond. The printer will NOT allow me to continue using a color cartridge that is empty. I had to purchase all three colors again but the colors are rapidly disappearing. The sales person assured me that if I print in Black and White and not gray, it would not use any of the color ink. Otherwise, I would have bought a monochrome laser printer. It doesn't allow me to "continue". It actually refuses to continue. Other posts have said that they can get it to print without using color but I cannot.

Unfortunately, I do not have an answer -- apparently the documentation says one thing and the printer is doing another.
Nor can I offer a reason for the color ink draining so quickly.
As to the sales person, they use the information they have -- and they say what they will.
I found a review dated 2017 -- that's a while ago but does not quite put the printer in "vintage" age.
It's possible a printer Restart / Reset might fix one thing but I don't think it would impact how the ink is being use.
Hopefully someone who understands the printer model can offer something.
