The printer will not let me print unless I replace the color cartridge. I only use the printer to print in black ink.

Yes, on that printer model is mandatory to have all inks to print. If any ink is empty printer stops printing.

This is the very last time I buy a HP printer. I can't stand when they lie and cheat like this. From the connectivity issues even on a hardwired network to the "can only print if all cartridges have ink" I am totally done. Epson and Brother, here we come.
