My printer is printing browns/tans correctly when I print them with "plain paper, normal quality", but when I change it to "plain paper, best quality" or "photo paper, best quality" (which I always did before), the ink comes out purple.

I'd like to help!
To assist better-
1) Does the copy print out the same way?
2) What's the application you are trying to print from? Have you tried printing from a different application or device?
While you respond to that, let's print a Print Quality Diagnostic page
Load plain white paper in the input tray.
On the product control panel, press Setup (
). The Setup menu displays.
Press the button (
) next to the Down Arrow (
) to select Tools, and then press the button (
) next to OK. The Tools menu displays.
Press the button (
) next to the Down Arrow (
) to select Printer Status Report, and then press the button (
) next to OK. The Printer Status Report prints.
Post the Print Quality Diagnostic page here so we can help you further.

Try updating the printer's firmware - HP Printers - Updating or Upgrading Printer Firmware

Hi there,
Yes I tried to copy a page with brown on it and it came out purple as well.
I am printing from Silhouette Studio because i make stickers and need to print from there (and always have with no issue until now).
I've tried performing the cleaning functions available on the printer and nothing changed.
I'm not home right now but when i am, I'll try the print quality diagnostic page and post the results.
