I thought this printer - HP Photosmart 5510 would print with just a black cartridge installed (the color ones are empty so I removed them (as per the instructions in a video I watched) if I chose print in black ink only on the printer properties in Word. But I keep getting an error message on the printer that those cartridges are out. How do I get around this?

It will not work, that printer model requires all ink to be inserted and not empty if you want to print.

If any ink cartridge is missing, or empty the printer will stop printing. Also, in the user manual is explained to never turn OFF the printer with ink cartridges removed because that can damage the printhead.
