Every time I print a document, I have to choose plain paper and black ink. I am saving this every time, yet it reverts back to glossy and gray scale.

We don't know your printer model -- we can, however, infer that you are using Windows.

In general, Settings stick according to the rules for that application or software.

I've offered (below) a few of the more common methods to control job settings.

HP App - Job Configuration

For example...

HP Smart / HP App (replacement for HP Smart) do not understand the concepts of "saved" / custom settings. 

The app opens and presets to whatever internal settings the application supports .

-- Caveat --

Shortcuts can be selected, optionally configured, and then Saved in Printing Preferences.

Next,

Presets / Shortcuts in Printing Preferences can be used / called in HP App during job configuration to help reduce the number of settings that have to be adjusted for the current job.

True -- this method is not automatic and requires you select the Shortcut you want to use for the current job.

Related to Printing Preferences --

Printing Preferences Shortcut selection "sticks" until it is changed, possibly for a different job.

Printer Properties supports choosing Printing Defaults for "All Jobs" .

Windows 10

Control Panel > icon view > Devices and Printers

Right-Click on Printer > Printer Properties > Tab Advanced

Windows 11

Settings > Bluetooth & devices > Printers & scanners > Select Printer

Printer Properties > Tab Advanced

• Driver:  Select the HP driver as opposed to the Microsoft / IPP class driver
• Reprint later:  Select Keep all documents
• All Jobs Default:  Printing Defaults
