Product: HP OfficeJet 7612

Trying to troubleshoot why we go through so much color ink on our HP OfficeJet 7612, despite only printing in black ink.  Does the color ink dry up after a period of time?  Might the date printed on the ink cartridge package provide a clue, i.e., is it an expiration date?  If so, what should the date, or range of dates, of a newly-purchased ink cartridge be?  Any tips and insight into shelf life, or other suggestions, would be greatly appreciated.  Thank You!
