"Why" questions can be easy to answer or difficult to answer.

 

This printer and this answer:

Printer is built / manufactured to require all cartridges have ink and all cartridges are functional.

 

Black ink only / Print with only black ink / print with one cartridge / single cartridge

Your printer is designed to print only when all ink cartridges have ink. Some ink from all the ink cartridges is used in periodic servicing tasks. This helps to prevent issues such as printhead clogs and poor print quality. There is no way to bypass this feature.
