Welcome to the HP Community Forum.
Based on the questions and comments we see in the Community, Cartridge Protection is likely not what you believe it to be.
Cartridge Protection is not a setting that switches off the Dynamic Security that protects the printer from using non-HP chipped cartridges.
Cartridge Protection places a lock on installed cartridges to prevent them from being used in other printers. The setting is useful in (for example) an office (or public) environment where employees or others might be tempted to remove cartridges from work printers for use at home.
"Just in Case"...
The following is relevant to Cartridge Protection:
Open your favorite browser > type / enter Printer IP address into URL / Address bar
Tab Settings > Supplies > Supply Settings > Cartridge Protection = OFF or ON
The Cartridge Protection feature allows cartridges to be permanently protected for use in only one fleet of products or product to help prevent theft. If, after cartridges have been protected, they are moved to a device outside the fleet (fleet based) or to a different printer (printer based), these cartridges will be identified as protected and will have to be replaced to continue printing.
Note:
When you turn on this feature, all cartridges installed in the printer will be protected. However, if you turn off this feature again, these cartridges will remain protected. Only cartridges installed afterwards will not have cartridge protection enabled.

HP Printers - Dynamic Security Enabled Printers
Excerpted from the document
“HP printers are designed to work with original HP ink and toner cartridges. As is standard in the printing business, HP printers use a process to authenticate cartridges. In certain HP printers, this authentication process includes dynamic security measures. Dynamic security relies on the printer’s ability to communicate with the security chips or electronic circuitry on the cartridges. HP uses dynamic security measures to protect the quality of our customer experience, maintain the integrity of our printing systems, and protect our intellectual property.”
