I just setup my new HP DeskJet 2700e and am using OS 15.1.1 

The printer is only printing in greyscale even though the test print, in color, came out correctly. I don't see any settings anywhere that would allow me to print in color.

I reviewed the post regarding issues with the printer printing only in grayscale and not in color. It will be a pleasure to assist you here.

 

As the test page is printing in color, it seems to be an issue with the settings.

 

For a start please try these steps:

 

Reset the Mac printing system from here: HP printers - Reset the printing system (macOS) | HP® Support

 

Then download and Install HP Smart app to complete setup and support from this link: after selecting the correct operating system.  HP DeskJet 2700e All-in-One series Software and Driver Downloads | HP® Support

 

This should fix the issue.
