I installed the latest Win 10 Home, Version 22H2.

My HP Officejet Pro 8100 will no longer accept Plain Paper and Draft as my printing preferences. 

It automatically reverts to Custom, plain white paper or HP Advanced Photo Papers, draft combinations.

Also it will not print with black ink only when other ink tanks are empty.

All of the above was possible before I installed Version 22H2.

I understand you have tried updating to a new version of Windows and caused issues with printer settings and drivers. Here are some steps you can take to troubleshoot and potentially resolve the problems you're experiencing with your HP Officejet Pro 8100:

1. Update Printer Drivers Software and Drivers for HP Officejet Pro 8100 ePrinter series - N811

Ensure you have the latest drivers for your printer installed. Sometimes, Windows updates can cause compatibility issues with older drivers.

  • Download and Install Latest Driver:
    • Visit the HP Customer Support - Software and Driver Downloads page.
    • Enter "HP Officejet Pro 8100" in the search bar and select your printer model.
    • Download and install the latest driver for Windows 10 (64-bit).

2. Reset Printing Preferences

Resetting the printing preferences might help in restoring the settings you need.

  • Reset Preferences:
    • Open the Control Panel.
    • Go to Devices and Printers.
    • Right-click on your HP Officejet Pro 8100 printer and select Printing Preferences.
    • Set your desired preferences (Plain Paper, Draft, etc.) and click Apply.
    • Close and reopen the application you are printing from to ensure the settings stick.

3. Check for Firmware Updates Update the firmware on an HP printer

Ensure your printer's firmware is up to date. Sometimes, firmware updates can resolve compatibility issues.

  • Update Firmware:
    • Visit the HP Customer Support page and check if there is a firmware update available for your printer model.
    • Follow the instructions provided to update the firmware.

4. Check Printer Settings

Sometimes, settings can get reset or changed during an OS update.

  • Check Printer Settings:
    • Open HP Printer Assistant from the Start menu.
    • Go to Print & Scan and then Printer Settings.
    • Ensure that the settings for paper type and quality are set correctly.

5. Use HP Print and Scan Doctor HP Print and Scan Doctor

HP provides a diagnostic tool that can help identify and fix printing problems.

  • Run HP Print and Scan Doctor:
    • Download and run the HP Print and Scan Doctor.

6. Black Ink Only Printing

Many HP printers are designed to use a small amount of color ink even when printing in black and white to maintain printhead health. However, you should be able to print with just the black ink cartridge if needed.

  • Print with Black Ink Only:
    • Open Devices and Printers from the Control Panel.
    • Right-click your HP Officejet Pro 8100 and select Printer Properties.
    • Go to the Device Settings tab.
    • Check if there's an option to print in "Black Ink Only" or "Grayscale".
    • Ensure other ink tanks are not completely empty as some HP printers will not print if any of the ink cartridges are empty to avoid potential damage.

7. Reinstall the Printer

If the issues persist, try uninstalling and reinstalling the printer.

  • Uninstall Printer:
    • Open Settings and go to Devices.
    • Click on Printers & scanners.
    • Select your HP Officejet Pro 8100 and click Remove device.
  • Reinstall Printer:
    • Reconnect the printer to your computer and allow Windows to automatically install the driver, or manually install it from the HP support website.
